how to store cooked beetroot

I have just boiled up some beetroot and was wondering what is the best way to store it and how long it will keep?

It's sliced up and cooling in a dish at the moment.

    I freeze it, open freeze on greaseproof paper. Then bag up and pop in freezer. Defrost as much as you want at the time.

    as Linda says it keeps well in the freezer, it can keep for about a week (or more) well wrapped in cling film in the fridge.
    and you can pickle it now it has been cooked - no special spices or anything - in just your bog-standard malt 'chip shop' vinegar. just chop or slice and put in a clean jar top up with the vinegar and lid tightly. will be ready to eat in a few weeks and will keep for months.
    PS - I like to add a teaspoon of sugar to my pickled beetroot - I don't like it too sharp.

    I'd chop it into cubes or slices, freeze it and use as much as needed when required.
