Hi I have three tubs of long-life d/cream in the fridge .As I am watching my weight at the moment These were left over from Christmas Long dated until April/May Could I make ice cream from them do you think and has anyone tried with long-life stuff ,failing that what can these be used up for Both my DDs are dieting as well so no good passing them on to them I thought if I could make Ice cream then my DGS who have hollow legs might help use them up

Hi JackieO, funnily enough I have cream to use up and found Novella Lawson has a great easy ice cream recipe. I can't do links on my gizmo but on nigella.com the ceripe is called One Step No-Churn Coffee Ice Cream. If you read the comments below the recipe, people have adapted it using other flavours. It scoops straight from the freezer too. So I'll be giving it a try.
By the way, that should be Nigella! Autocorrect does some funny things...0 -
I had one tub of double cream to use up last week and used it for beef strogonoff. It made a nice though thicker than usual sauce. Probably not the best idea for dieting though.0

There's an adaptation of Nigella's recipe here that uses elmlea. It uses bananas but you could probably substitute other fruits.

Ice cream will work fine; I'd be inclined to cut it 50/50 with plain yogurt to make it a little less rich, and add the fruit of your choice for flavouring.
Not fresh pineapple though - for some reason (something to to with the enzymes in pineapple I believe) it doesn't work well for ice cream. Tinned pineapple apparently does, though I've not tried this myself.If your dog thinks you're the best, don't seek a second opinion.;)0
