I thought the point of split ticketing was to to stay on the same train as long as it stopped at said stations on the split tickets.

changing trains to me is NOT split ticketing.

    Anyone?!

I thought the point of split ticketing was to make the journey at a cheaper price than a through ticket would allow - whether that involves changing trains or not.

Whether or not you change trains is irrelevant; "split ticketing" is an informal term referring to using National Rail Conditions of Carriage (NRCoC) Condition 19; using a combination of tickets.

It may be because there is no through fare, or it may be because part of the journey is already covered by existing tickets, or it may be to save money.
