  • I can never tell when milk is just on the turn I only realise when my tea tastes funny.

Milk can still smell OK in the bottle but the heat from the hot tea is enough to turn it.
A kind word lasts a minute, a skelped erse is sair for a day.

My sense of smell isn't very good so that method doesn't work for me.
I have exactly the same issue and it's why I stick to the 3 day rule after opening for meat and would probably for cook-in sauces (though it's rare the whole jar isn't used for one meal). Anything else, would go on a taste or visibility test.

'Consume within xxxx' is often on jars which are pickled in vinegar so meant to be preserved so I ignore the suggestion.

DH ate some mint sauce last night that's been in the fridge longer than I care to remember and he seems healthy enough today.;)

I have used tomato ketchup and branston pickle that has been open longer than advised without any ill effects but I don't know if it depends on the product or if across the board I'm safe to just adopt the 'does it taste okay?' test and go ahead and use anything that does?

I think the vinegar in the sauce s preserve it , i

We always refridgerate sauces/pickles after opening as left for long somewhere warm, they can ferment. We stayed in a posh hotel which had a very nice brand of posh ketchup (which it did say on the side to refridgerate after opening) which you could tell from the temperature of the jar, hadn't been kept in the fridge. I loosened the lid slightly then had ketchup 'explode' out of the bottle all over me, the table and the wall. The ketchup had fermented.
