I was just reading about cooking thin courgette slices on a griddle and then using either dressed with oil and lemon juice or in a lasagne. I wondered whether it would be possible to have a mammoth cooking session (on my outdoor fire) using the annual glut of courgettes and freeze them. Has anyone tried this? or do you think it will work?
Quite topical today! There are some more ideas for freezing courgettes on the greenfingered forum. HTH
Thank you - someone has mentioned griddled courgettes and has a courgette cookbook. I will have to check out Greenfingered a bit more to see if there are other 'glut' recipes.
