freezing leftovers ... as hash!

discovered the delights of leftovers hash made with mash potato, and just wondered how well this would freeze? from experience I have found hm mashed potatoes doesn't freeze too well so wondered how well hash would freeze? there will be left over meat, stuffing, veg all mushed up with the mash ...

I've had a go at this for the first time this year, with the aid of a St Delia recipe. They're more of a potato cake than hash, using up leftover ham and mash. I bound them together with an egg and lots of seasoning (discovering dried herbs I didn't know I had!), then formed into smallish patties and coated in breadcrumbs. I've frozen them like that on a baking sheet. Hopefully they will cook well for brunch at new year. I think I'll shallow fry them in oil as per the original recipe. I freeze mashed potato all the time and have no problem - my trick is to make it thicker than I normally would though, as it does end up a bit runnier when you defrost/reheat. I freeze in plastic takeaway tubs, don't know if that makes a difference too.0
