  • I've had a go at this for the first time this year, with the aid of a St Delia recipe. They're more of a potato cake than hash, using up leftover ham and mash. I bound them together with an egg and lots of seasoning (discovering dried herbs I didn't know I had!), then formed into smallish patties and coated in breadcrumbs. I've frozen them like that on a baking sheet. Hopefully they will cook well for brunch at new year. I think I'll shallow fry them in oil as per the original recipe. Hope that helps.

I freeze mashed potato all the time and have no problem - my trick is to make it thicker than I normally would though, as it does end up a bit runnier when you defrost/reheat. I freeze in plastic takeaway tubs, don't know if that makes a difference too.
