freezing veg

hi....dont know if im on right page but i bought a load of cheap potatoes and carrots.....thinking of freezing to make cooking quicker at xmas......whats best way to do this??

    Cook your spuds - mash or roasties, then freeze

    Now with the carrots, some say blanch, others say dont bother. What I would say is freeze on open trays before bagging them so you can take what you want out as an when

    yes, good idea. if doing roasty pots just parboil them and freeze. you can par cook the potatoes for mash or make the mash and freeze it then just defrost and heat up on the day. (don't add butter or milk btw - it just makes the mash watery when defrosted).
    Brussel sprouts can be trimmed and frozen without parboiling - same with carrots, runner beans, French beans, Cauli - I dunno why, but they never need as long to cook once they have been frozen. so be aware they take a couple of minutes less when timing your dinner.

    you can even cook the meat and slice it, make the gravy and put it all in a large foil tray and heat it up on the big day. Sort of like making your own 'ready meal Christmas dinner'! but much nicer because it IS all homemade.
