Runner beans, runner beans and more runner beans...

hi there everyone! I gues most of us who have planted runner benas this year is now inundated with them. I have been having trouble keeping up with the crop...one could only eat so much runner beans. Anyway, I have consulted my trusty mum regarding freezing them which is one idea that could be done with tons of runner beans. Now, I have been naughty and yes I spent some money for a prima magazine (but is was well worth it..it was a good one...). In this month's prima magazine issue, i have found a recipe of courgette and runner bean chutney which could possibly be an idea as a christmas pressie for a chutney loving person. Appparently this chutney is great with oily fish, such as mackerel.

Ingredients :
600g/1 lb 5 oz runner beans, finely sliced
5 courgettes, thinly sliced
2 onions, finely chopped
450g/1 il dark brown sugar
1 tsp mustard seeds
1 tsp mustard powder
pinch tumeric
600 ml/ 1 pint pickling distilled vinegar


1. In a large pan, add beans, courgettes and onions. Stir, then tip in sugar, mustard seeds, mustard powder and tumeric.
2. Now add vinegar and give it a good stir, then bring to boil. Turn heat down and simmer gently with lid off for about 1 1/2 - 2 hours, till it begins to thicken and sweeten. Stir occasionally, making sure it doesnt stick or burn.
3. when ready, spoon into jars and leave to cool before sealing.

I apologise if this has been already posted...but I do hope that everybody would enjoy this as a variation for our good old runner beans.:p
