Rescue me and my maslin pan please!

OMG, help!

I can't believe I've been so daft. I'm in the middle of making Delia's damson chutney and got so carried away reading MSE (oops) that I completely forgot it and left it cooking for the last hour and a half without even looking at it!

Result? One preserving pan with, literally, a good quarter of an inch of carbon stuck to the bottom!

I'm SO upset. I treated myelf to this lovely pan only 2 years ago. It's a stainless steel one and it cost me a fortune.

Can anyone please tell me how I can get it clean? I've just shoved a load of cold water in it for now and am leaving it to soak. Should I put anything in the water to help?

thanks custardy - it's on the stove as we speak, waiting for the water to come to the boil.

Should I stir it whilst it's boiling or just leave it alone?

yeah you can.i would use a wooden spoon so as to avoid gouging the pan.as it boils you should be able ot start breaking off chunks of the black stuff.
if it get to dirty just replace the water and start again.

As it is late now, I would put the pan in the sink with some Ariel/ washing soda in hot water and leave overnight.

Tomorrow I would put the pan back on the stove( supervised! - if you think you are going to forget it then put an egg timer on to go and check it) Either put washing powder- a small amount or washing soda in it and bring to the boil. This will help to dislodge the gunge on the bottom but you may need a few attempts to get it back to its original condition. Dont despair- we have all been there!

    thanks janb5 And custardy!

I'm glad I'm not the only insomniac around here!

I have boiled up the pan with just water in it, once, and managed to get a fair bit of the stuff off,I'm amazed, I thought it was absolutely ruined.

I am now going to put it in soak overnight and try again tomorrow.

Unfortunately, I only have the liquid washing stuff in the house - gave up using powder a while ago as it just gunged up the washing machine - so I will have to get some in the morning and try with that.

Thanks again both of you - will let you know tomorrow how I go on!
  • I did EXACTLY the same last weekend with a borrowed Maslin pan and Delia's Spiced Plum Chutney, what a mess:eek:
I used various potions which i hunted for by the search facility on MSE. Used Oxiclean powder, also salt and newspaper, vinegar boiled up, boiled it up with biological washing powder and then with washing up liquid. Inbetween times, i hacked away at it with various kitchen implements and about 3 packs of Brillo!!! Was tempted to take a black and decker sander to it at one point-the blessed stuff was stuck on fast.

Eventually, after 5 days, it is clean! I will never leave it again!! I have learnt my lesson-not very MSE to have to replace a very expensive pan!!! Good luck with yours, you will get there!

OK so we all seem to have been doing the same thing. My disaster was with Delia'sSpiced Plum Chutney as well. Couldn't possibly be us it must be something to do with the recipe:rolleyes:

My pan is not as posh as yours. I use my children's great grandmother's aluminium preserving pan but as you can imagine it has great sentimental value. I also boiled it up to get the worst off but because it is aluminium I don't use bio powder on it. I was scrubbing away but there was a patch that there was nothing doing with :o I was going away and short of time so I just put it to one side to deal with when I came back. :D

Imagine my surprise on Friday on my return when the offending patch had simply dried out and flaked away - sometimes being a slob really pays.:j

Oh blimey cannylass....are you my long lost sister? :rotfl: :rotfl: :rotfl: I've just started a replacement batch myself as well! - picked some more damsons this morning!

As you will gather, I managed to get the pan clean - boiled it up again with some more plain water this morning and used a wooden spatula to chip away at it - lo and behold, huge great lumps came off - brilliant! I then got the last off with a brillo pad, so didn't need the washing powder tip this time (will save it for next time : lol)

Dolly day dream - maybe you have a point about the recipe. I've made it loads of times and, according to Delia, the chutney should be thick enough after 2 -3 hours simmering but I always find it takes at least 4, sometimes 5 hours.....that's why I get distracted into doing other things and forgot to go back to it this time. Of course, the problem is, as it does start to thicken, right at the end, is when it needs the most stirring.

Anyway, today I will not forget, I will not forget, I will not forget...............what was I saying?? :rotfl: :rotfl:

Thanks for your help with this one.

It may be worth contacting Delia via www.deliaonline.co.uk about the problem with the recipe so she can adjust future recipes!
