Help with Indian style meal

I have a 2kg bag of red split lentils, and would like to use for something other than bulking out soups and shepherds pies.
I would like to try a dhal/daal, but unsure the easiest way to do it.
I also have two chicken breasts, cauliflower, spinach, mushooms, small tin of chick peas, rice, naan bread, passata, tinned tomatoes, tomato puree, various spices (tho no mustard seeds or garlic, and an emergency jar of tikka masala sauce.
I also have found some creamed coconut sachets which are rock hard - probably as they are best before August 2012!!!
I would love some suggestions as to what I can make - need a changed from chicken and mushrooms with the tikka masala sauce and rice!!

Hi, do you have any onions? Onions cooked very slowly are really important in curries.
Do you want to avoid rice totally because you have cauliflower and spinach which would make a lovely side dish.

Yes, I have a bag of red onions. There will be two of us eating, and like medium spiced foods, nothing too spicy but not keen on korma or creamy sauces.0
