It's just because of the way the machine works... Rather than putting it in a really hot oven that would create a crust quickly and lock in the moisture, the loaf site in the BM as it heats up too, meaning it dries the loaf out and then cooks it. Not good!
Have you tried just using the BM to mix and knead and then cooking in the oven after?) so I'll dig out the booklet next time I am there.
I don't see the point of using the BM to mix though, it's just more washing up!Value-for-money-for-me-puhleeze!

VfM4meplse - I use it to knead (and mix of course) because my wrists won't allow me to knead by handThere wouldn't be any more washing up though, you still need a bowl (in my case bm) to mix/rise and a tin to bake, yes?

I didn't know you could get bread machines with 2 paddles, lol, but yes if it only has 1 the baking tin would need to be square. I think I mentioned on another thread that my breadmaker has a rectangular shaped tin, but it doesn't knead well, because it has one paddle in the centre of the tin, and of course bits of flour and dough gets stuck at the the furthest ends of the tin where the paddle can't reach.sealed pot challenge 9 #0040

I have had a "two paddle one". It sounded great but was actually a nuisance because the holes from the paddles covered nearly all the loaf, and they kept getting stuck in.
Also, each paddle seemed to twirl its own bit of dough, so the finished loaf looked like two round ones stuck together.0 -
