What would you do?

Ive designed a meal for tonight combining some recipes ive seen on the net. Im going to cook haddock loin in a tomato sauce with spring onions and garlic. Im going to layer with sliced potatoes and possibly a white sauce and then put cheese on top.

Would you put everything in raw ie bung in chopped onion, tomatoes and raw chunks of fish and layer with raw potato and put in the oven for an hour or so? I would prefer this as I can relax plus less washing up;)

Or do you think it would be better to cook the fish or maybe fry the potato first. Ive made fishy things using both methods though ive never used sliced potatoes!!! Help!!

Any idea how long I will need to leave it and what temp?

  • Hmmmm, well my first thoughts are that potatoes willtake longer than the fish to cook unless you slice them VERY thinly so I would be tempted to par boil them first before bunging it all together and then baking. i might be tempted to saute the onions too and generally cook for lesser time as I think an hour seems a long time for fish. But I will be interested to hear what others think.
  • I entirely agree with all the points made by poodlehorse. I would parboil the potatoes and gently saute the onions before adding. I am doing a red onion gratin for tonight and altering it to add/use up some cooked chicken and potatoes. It cooks at a fairly high temperature for an hour but I've been caught out with sliced potatoes before so I am going to steam them for a bit before making the dish. I hope yours (and mine) both turn out well.

    they will be very thinly sliced so would 5 mins be ok for parboiling? Im worried they will fall apart on me!
  • That should be fine if they are very thinly sliced, but make sure the water is simmering rather than on a quick boil.
