From what I can tell from talking to friends who have used them is that it is more about time poor people who don't cook, but would love to. They want to start cooking, but getting around to making a list of ingredients and buying them is what defeats them. Plus they don't necessarily have a stock of store cupboard ingredients. So this is an easy way for them to cook from scratch.

That's the way I look at it too. I have time to meal plan, do a shopping list and then go and do the shopping at a supermarket. Plus, I enjoy the process of planning and shopping. But for a person who has a very hectic full time job and not much spare time, having the recipes planned for you and the ingredients that are required delivered to the door, would be a real boon. Sure, it costs more than doing it yourself, but it is a solution for a person who wants to cook, but doesn't have much time to do the planning and shopping themselves. It's a service that some people will be happy to pay for. If you can afford it, then why not pay for a service if it's what you want and will enhance your life
