I hope no-one minds me starting this?

I plan Monday to Friday (I'm much more likely to give up and get my money out during the week), cook on a Sunday, and aim to be vegi at least two days a week. Also trying to recommit to slimming world :o

Monday - Vegi
Cooked breakfast - 2 quorn sausages, 2 HB eggs, 1/2 tub mushrooms
Omelette - 2 eggs, 3 L-babybel, mushrooms, red/yellow peppers, courgette, red onion, 50ml milk,
Chilli - Quorn mince, baked beans, butter beans, borlott beans, kidney beans, 3 tins tomatoes, 1/2 tub mushrooms, 3 onions, garlic, cumin seed, dried coriander, cayenne pepper

Tuesday
Overnight oats - 35g oats, 1/2 tub ff yogurt, 100g raspberries
Soup - Chicken, potato, carrot, leek, swede, cabbage, broccoli, peas, spinach, spring greens
Chilli

Wednesday - Training
Overnight oats
Soup
Chicken casserole + root mash - Chicken, spring greens, carrots, swede, onion, cabbage, celery, mushrooms, leek, lentils, stock, carrot & swede mash

Thursday - Training, Payday & Weigh-In
Overnight oats
Slimming World ready meal - Chicken Tikka
Chicken casserole + root mash

Friday - Vegi
Cooked breakfast
Omelette
Chilli
That sounds like a classic case of premature extrapolation.

We have mostly got veggie meals this week, as there is not much money left at the end of the month. I only plan main meals, but may make a spicy parsnip soup for my lunches. These will feed 4 adults and a teenage boy.

    Corned beef hash
    Bacon and pesto pasta
    Veg and cheesy rice bake
    Spicy mushroom and broccoli noodles
    Veggie shepherd's pie
    Bean and barley stew
    Chickpeas with tomatoes and spinach

I am on my own in the evenings Sunday to Thursday (Mr Zaxdog is a chef) so I try to plan otherwise I'd just have toast or snack on rubbish!

Sunday: Chicken & asparagus spicy rice

    Monday: Herring & steamed veggies

Tuesday: Chicken & sweetcorn spicy rice

Wednesday: Quorn spag bol & spaghetti

    Thursday: Sausage & lentil casserole

Leftovers will be lunches for the next day and if I've been a pig and eaten everything I'll do a quick slow cooker soup with split peas/lentils and random veg.

AND I pass an Aldi on my walk home so I see a lot of 59p asparagus in the next few weeks :D

Really pleased to see the menu planning thread back. It helps me so much to keep on track.

Mon 26th - Pasta with bacon, mushroom, tomato and garlic sauce. Salad.

Tue 27th - Salmon steaks, potatoes, carrots, brussels and broccoli with cheese sauce.

Wed 28th - Pork, pepper and paprika casserole, mash, swede and kale

Thur 29th - Mixed bean and chorizo chilli quasadillas, salad and chunky coleslaw

Fri 30th - Chicken curry, rice, chapatis, ratia and onion salad

Sat 31st - Homemade pizza night

Sun 1st - HM chicken kiev, fondant potatoes, creamy leeks & cabbage, roast baby tomatoes

Mon 2nd - Eating out - woo hoo!

Tue 3rd - Soup & Pudding Supper. Likely bacon, leek & butterbean followed with apple cinnamon sponge and custard

Wed 4th - Toad in the hole with onion gravy, kale and carrots

Breakfasts are porridge, eggs, yoghurt and fruit.

Lunches are soup of the week - to be decided depending on what's available and in season.
  • I'm so pleased to see this thread back to, it was always one of my favourites and I got so many ideas from other folks menus.

My meal plan week runs from Saturday to Friday, so ends tomorrow, but I will definitely post next weeks plan.

ooo i love having a nosy on these, I seem to cook the same very week so not a very exciting read, and I alternate cooking with DH, who is a lazy chef!).But this week:

    M: Chicken Fajitas
T: Cottage Pie (one topped with mash, one topped with mash lentils)
    W: Pizza and Chips
T: Chicken Curry (one with Rice, one with grated carrot)
    F: chicken nuggets and chips

I try to serve my meals with veg or lentils instead of rice, mash or chips.
