The default position would be to include the wife, some lenders will insist on this anyway.
If you can only get the required lending in your name only, then leave her off the mortgageI am a Mortgage Adviser

Irrespective of whether your wife is named on the mortgage application or not. She is financially dependent on you. This will have an impact on the amount you able to borrow.0
