I just this second finished eating some homemade tomato tart. 1 roll of puff pastry, chopped up loads of tomatoes and put them on the pastry, leaving a gap round all the sides. Sprinkle on some chopped garlic, rip up some mozzarella and put that on top, bake in the oven until the pastry rises on the sides. Eat with salad. I made curry tpnight, chopped up toms, little bit of chilli, two cloves of garlic and half a chopped onion roasted in oven with vegetable oil salt pepper until juices flow then into blender, add a couple of spoons of plain yoghurt, then added to frying pan with chopped up chicken, chucked in some curry powder bit of cumin and paprika for colour and simmer for 25-30 mins, OH was very impressed!I have had many Light Bulb Moments. The trouble is someone keeps turning the bulb off

if you are stuck for time/ideas/incentive, just lob them whole into the freezer, they'll keep fine until you are ready. (no good for salad after freezing tho')0

Last week I bought a lot of cheap vine ripened toms. I cut them in half, sprinkled them with a tiny amount of sugar, some sea salt, and a sprinkle of balsamic vinegar. I then roasted them in the oven until they were sort of sticky and caramelised. They are delicous like this, but then I whizzed them up till smooth in the liquidiser into a paste. I bottled the paste in vinegar proof topped jar, and now can use it as a very rich tomato paste for adding a dollop to pasta etc. Bottle it in as small jars as you can. I have kept it in the fridge, as I am not sure how well it will keep in the cupboard. My freezer is full, so can store it in there - but it would be a good idea to freeze in ice cube trays, as it is so rich.
I'll be on the look out for more cheap toms, as this is absolutely gorgeous - can't wait for the glut from the greenhouse.0 -
Hi all
I have lots of home grown tomatoes, some red, yellow, and some green.....
What I would like to know is what i can do with them, I would hate for them to go to waste.
I use the red ones for sandwiches/kids pack up. I also use the red and yellow ones in salad. There is far more fruit than I can use, so any advice is extremley helpful0 -
