I am looking for a recipe for a 9" round fruit cake, but all I seem to be able to find are Christmas cakes.
Does anyone have an easy recipe I could try please? I use the Mary Berry recipe for my Christmas cake but that would be too rich for an 'afternoon tea' cake.

Hi I use this one regularly, my grandma's recipe I think!
150g brown sugar
300g mixed fruit - whatever you like
100g glac! cherries -I just use more sultanas!
150g finely chopped pineapple (tinned)
175 ml pineapple juice
100g butter or Margarine
Mix these together in a sauce pan and bring to a boil and simmer for 10 mins then leave to cool down slightly then mix in the following;
2 eggs
200g self raising flour - I use doves farm gluten free flour
9inch tin, lined and bake at 160c for one and a half hours or until toothpick come out clean2019, move forward with positivity! I am the opposite of Eyeore :rotfl:0 -

I use this which is very similar to and a lot nicer than Mr Kipling's Manor House cake.

Glad you liked it Clareski! I quite often do half in a small 6 inch tin when I have the oven on already. I use those individual pots of pineapple that I have for work and then just make up the juice with a bit of water to the amount needed.

This is almost exactly the same as the one my late Mum had written down in the back of her BeRo book (remember those) only difference with hers was the two tablespoons of treacle - guess it was to make the cake richer and darker in colour!! Remember it was a fabby doo cake though!
