If I buy say a holiday on my credit card and then pay it off a couple months later. If I then have say a problem with the booking when it comes to going, are you still covered? Or are you only covered by credit cards if the amount isn't paid?

You are still covered. It's the act of buying it that covers you.0

The sensible people on here pay off their credit card balance every month, so it would be disappointing if we were then not to get S75 cover: luckily as Tadley has explained, we do, and at no cost in interest payments to us.0
