well i went to the shops and i found some cod fillets that were cheep as they go out of date today, sooooo my question is
how do i cook it?
does anyone have some nice recipies? im going to supprise oh for tea tonight and see what he thinks of my cooking?

Try wrapping in bacon and putting in some foil in the oven for 10 mins. You can then put them on a baking tray to crisp up. Serve with a salad and roast or new potatoes, yummy!0

I made cod with spring onion mash and soy butter sauce on Saturday night - very yummy and easy. Got this from Rick Stein book but didn't have any coriander or tomato in for the sauce so made it like this:
Cook potato & mash with milk & butter - fry a couple of spring onions until soft then mix into mash - you can do this early & reheat if you want.
Put 1 pint fish or veg stock in pan with 2 tablespoons soy sauce & boil rapidly until reduced by 1/2. Meanwhile brush cod with melted butter and grill for 8-10 mins - when all ready whisk 3 oz butter into sauce a bit at a time.
Serve mash in middle of plate - cod fillet on top - sauce around the mash (you probably won't need all the sauce for two people). Eat with fresh veg.
Or even easier - wrap in foil parcels with cherry tomatoes, herbs, salt, pepper and a splash of white wine - think it takes about 20 mins in oven - always estimate it myself - serve with potatoes & veg.
