Witnessing a mortgage deed

My girlfriend and I are buying a property and need the above witnessing.
Can my signature be witnessed by her parents and her signature by mine?
The only instructions I have are that the witness must be over 18 and not a relative.
Or would the above be classed as a relative even though we are unmarried?
