Can you ask a jobcentre to transfer you to another jobcentre if its more convenient for you? Or can you choose where you go?

You can ask, but they might say no. It's up to them.

You'll need to go to the office you want to sign at and ask them to transfer in. If you do this on or close to your normal signing day, your payments will likely be delayed whilst the transfer happens.

You don't ask them if you can transfer in. You would need to go to the Jobcentre you wish to claim in, explain you have been claiming at X office and wish to make a Rapid reclaim at this Jobcentre. You do need to consider that this will then be treated as your assigned Jobcentre and you will be required to meet their expectations appointmentwise etc however far away you live.

That's incorrect - the claim stays live and transfers to another office, there is no need to do a rapid reclaim. It's called a Live Transfer.

Your signing office is linked to your address so you may not be able to transfer without very good reason.
