    How much trouble do you want to go to?
    Do you want to do home-made (e.g. soup) or just serve something that you've bought (e.g. Waitrose potted shrimp)?

    I make my own potted shrimp and love it!
    stuffed mushrooms (life is too short to write a book!)
    our farmers market has local smoked meats, wonderful sliced thinly
    love the idea of pears (right time of year) but have to say that I only eat asparagus in the English season (May / June)

    Homemade ideally.

    Beef wellington is the main, so something in keeping with that.

    I wouldn't do pate then as some recipes use that in the Beef Wellington.
    And some use mushrooms to top the beef.

    So depending what your recipe is, I'd skip either pate or mushrooms.

    Beef Wellington is a pretty hefty main so I'd go light on the starter.
    Maybe go with the prawn cocktail or melon, maybe served with prawns as per this Aldi recipe:
