Sultanas - gone off?

I've just made a lovely dorset apple cake for my hubby. While it was in the oven I went to put the sultanas away and realised they looked almost like they had sugar on them (they didn't).

Does this mean they have gone off? I don't use sultanas that often, and thinking back they are probably what I used last November for the Christmas pudding. They are still in the pack, which had a clip sealing it, and the date on them is Oct 15.

Should I let hubby eat the cake?

    The sugars in the sultanas have started crystallising. Quite harmless.

    The sultanas won't be as moist as fresh ones but that probably won't matter in a cake.

    They are fine to eat, have you tasted them? I love sultanas when they do this :)

  • As others said, they're fine, but I find they can be a bit too dry/hard at this point. If they're not moist enough, you can soak them, I use tea from time to time to soak dried fruits. Even throw in some spices, like star anise, cinnamon, etc..

    U can use them in a cup of tea loft, - soak the fruit overnight in cup of tea, or put them up ready for the xmas cake - soak them in alcohol ready x

  • I too like to soak sultanas to 'plump' them up a bit if they seem to have dried out somewhat.Have you noticed that already the supermarkets are increasing the price of dried fruit grrr...
