    It has a few fancy ingredients but i am sure the recipes can be adapted to make them more OS.
    Finally I'm an OAP and can travel free (in London at least!).
  • I'm a fan of minimalist cooking! These are some of the meat free dishes I do that are quick, tasty & filling

    aubergine bake is simple and delicious & very filling
    potato, chickpea & spinach curry
    veg lasagna/chilli
    courgette, cream cheese & pasta

    Just coming back to say thanks, and that we are eating well! This week has seen the menu include a butternut squash/potato/spinach curry, which they loved, and the rest of the butternut squash is going in to a butternut and chickpea stew tonight which I found on the Sainsbury's Homemade by You website. We have also had a cheesy pasta and broccoli bake which went down very well. I am making some use of Quorn mince, and no one is complaining about the food at the moment! Thank you for all your help x

  • I've found the River Cottage Veg Every Day book to be very good (I got it for a fiver off Amazon).

    I've been veggie for 25 years and have rarely bought the meat substitute products; perhaps they're for those who miss meat (I hated it since I was a baby!).

    There are a few alternatives to Quorn mince which you may find a bit cheaper. I know that Asda do their own veggie mince in the freezer section, so other supermarkets may do the same. (I don't live in the UK any more so not up to date on this).

    I'm not a great fan of meat substitutes, but find that veggie mince is rather good, especially when feeding a mixture of vegetarian and meat eaters.

    Another alternative is dried soya mince which I know that you can buy from Holland and Barrett, although possibly available in supermarkets too.

    There is a savoury variety too.

    I buy this in the UK to bring back home with me, as I can't get veggie mince of any kind where I live, it's easy to transport and has a long shelf life.
    It's not quite as chunky as Quorn mince, but it goes a lot further being dried, so ends up being much cheaper. It bulks up to about 4 times the dried weight, so 100g of soya mince would equal 400g of mince, or in old money terms 4oz would make 1lb of mince. Use it in almost any recipe that you would use for normal meat mince. Don't think it will work for burger/meatball recipes due to the high water content, but happy to be proved wrong.

    Some recipes that I use with soya mince....

    Spaghetti bolognese
    Chilli con carne
    Lasagne
    Savoury mince & potato pie
    Veggie Shepherd's pie
    Moussaka (using either aubergines/courgettes or potatoes)
    Layered tortilla bake topped with cheese
    Stuffed pasta such as cannelloni
