A few months ago I thought I bought a 160gb ps3 slim but someone has put in a 60gb hard drive  so I would like to replace the hard drive to the original 160gb but could I upgrade to 500gb.

Yes, you can and it's pretty simple to do.
You need to make sure you get a HDD that will physically fit and i'm pretty sure you're limited to 1TB because of software/firmware limits.
It needs to be a 2.5 inch SATA drive with a minimum 5400RPM(7200RPM is supported though and will see load times reduced but they're meant to be prone to causing problems)
This is a decent enough one

It has a Seagate momentus 5400.2. I read that if you use 7200 it causes the ps3 to overheat.0
