So I managed a no spend day yesterday, I worked a bit later and avoided the resistance to buy a cake to sit and watch the GBBO with in front of the TV.
The OH made shepherd’s pie, with enough to be frozen and reheated next week. We’ve recently started the habit of cooking more from scratch and cooking a double batch so we have enough for two dinners. Any recommendations on other recipes?
 So far we have tried:
 Chilli
 Bolognese
 Sausage Casserole
 Shepherd’s Pie
I don’t think I can achieve a NSD today as the OH is meeting friends for dinner tonight and I have nothing in the house for my dinner. I’ll have to pick something up on the way home.
Any type of casserole can be frozen. Think beef in red wine with veg, chicken in white wine etc (you don't have to use wine obviously these are just examples). If you defrost, put it in a baking dish and add a pastry lid (bought ready rolled is fine, and cheap in Aldi or Lidl) and you have a pie, so two different meals from one recipe with little effort. Likewise, frozen bolognese can easily be transformed to become lasagne or canneloni. Curries also mostly freeze well. If you only have a small amount left of something like a curry or chilli, it is still worth freezing to use as a filling for a jacket potato and have it with a big salad, makes one portion feed two people, and super healthy
Leftovers of a roast dinner can be frozen, plated(use freezer proof or foil plates), and you have an instant ready meal.
Hopefully a few ideas to add to your repertoire. Check out the old style board for lots of others. Good luck with the arrival of your new baby 0 0
