When I was small the bread never proved in the kitchen. It was beside the fire in winter or just about anywhere warm at other times.

My Hubbie often proves dough by popping the dish/tray on top of a pan of steaming water, with tea towel over the top. The trays etc are so old and bashed they don't create a seal on the pan!
    Careful with the tea towel.

Mine gets proved in the airing cupboard mainly, or if the heating is on, on the mantelpiece over a radiator (much to the cats disgust who likes that spot!) I've never proved anything in the kitchen, it's generally not warm enough and I don't have room if I'm doing other cooking at the same time.

Heat just speeds up the proving process, so in a cold room it just takes longer (ie overnight).

If i want a quicker prove i use my microwave as a heat box. Put a mug of cold water in microwave, bring to boil, then add bowl of dough n shut door.

You really are better off slow proving bread, it gets a better flavour and texture

Mine I either prove over night in the fridge or just in a bowl on the granite work top.
  • Slow proving is the best way, but if you want to speed it up put it in the warmest room in the house

  • I sympathise, my kitchen is also very cold!

If something needed fast proving in the past, I'd put it in the airing cupboard. Since I got a solar water panel, that option isn't available any linger as I've now got a double-sized water tank and have lost shelf space.

I've been considering putting fast proves into the car, as it can get quite warm even in winter if there is any sun, but in general I try to plan for an overnight prove.

Otherwise, make soda bread, no proving required (and considering the variations on Bakeoff this week, there are plenty of alternatives!)
