Chinese Soup Base Mixes - Recommendations?
Hi All,
I love Chinese food, and planning a buffet for Saturday, but trying to keep my spending down by cooking the starters / appetizers from scratch. I got all of my essential cupboard ingredients from Wing Yip (spring roll wrappers, soy sauce, oyster sauce, spare ribs rub etc.).
The only thing I couldn't find was a soup base mix, I'm attempting a hot and spicy prawn and noodle soup (something light and refreshing, not the thick and gloopy style that resembles wallpaper paste that I have sometimes come across). Does anybody have any recommendations?

I've previously tried the BBC recipe, I wasn't that keen, but the Jamie Oliver one does look really nice, and I may well fall back on that recipe, but a Chinese lady that I worked with a few months ago, had told me her recipe for hot and spicy prawn soup, (which was absolutely delicious), and admitted that she cheated on using a teaspoon of this one ingredient - I will keep searching for her recipe.

I also sometimes make my own chinese style soup - homemade chicken stock, lemongrass, star anise, chilli, lemon juice, ginger, garlic, dash of soy, sesame oil and then chuck whatever else I can think of in there!it's nice to be important but more important to be nice!! :kisses3:0 -

I can't remember the name of the secret ingredient that she used, but it was a concentrated fresh stock that is used for soups, sauces and marinades, that could also be frozen.
Will keep looking.
