What to do with fennel?

Has anyone got any tried and trusted recipes for using fennel?

Due to problems with digestion, I can't have anything containing meat, cheese, cream, pasta or bread products.

I've thought of soup and will use one of them for that but wondered what I could use the other one for :)

    I slice some up and add to coleslaw, if I make roasted veg, I add fennel in.
    I also made a really nice fennel and white cabbage side dish that goes well with sea bass. I am sure I got the recipe from BBC but I can't see it on there now.
    I have never used it in curry though so will give it a try.
  • - Soup, but you've thought of that.
    - added to stir fry, but it will strongly flavour it
    - Salad, Fennel / orange / avocado
    - I put it underneath fish, in a package, and in to the oven
    - I griddle it, and serve with fish/other veg/what ever.... let it cool down and add to a salad.

    Cook it in a stew with chick peas, they go very well together.
    Finally I'm an OAP and can travel free (in London at least!).

    Use it to stuff red peppers before roasting. Delia recipe I think.
    Mortgage and Debt free but need to increase savings pot. :think:

    Fennel, radish & orange salad is a La Tasca dish and its scrummy. You can microwave-braise it as a side veg with fish
    You can add it to white wine & lemon for poaching fish, or add it to fish heads & carcass to make fish stock.
    It adds a gentle aniseed flavour.
    Or if you are growing it, you can let it go to seed to harvest for cooking or leave for butterflies & birds ;)
