Hi,my husband has planted three cucumber plants that now have heaps of cucumbers on them, does anyone have any ideas what I can do with them?
I looked on YouTube and you can dehydrate them but I have no idea how to use them when they are rehydrated.Any ideas greatly appreciated.

cucumber juice is good to dilute other stronger juiced veggies, it can be frozen as well.

It's also rather good with gin and/or tonic

If you have small sized cucumbers you can try this Polish traditional fermented cucumber pickle which doesn't use vinegar

Raita.
Half pint natural yogurt
4 tablespoons finely diced cucumber
1 tablespoon finely chopped fresh mint.
Mix all the above together.
It's an Indian side dish, but we like it as an alternative to mayo if we're having salad. If your dog thinks you're the best, don't seek a second opinion.;)0 -
Many thanks for all the suggestions,I will give them a try.0

Check out recipes for pickled cucumber salad; you need mint or dill although parsley might be OK
Peel or not, halve and remove the seeds.
Cut into half moons 5-10 mm wide.
Chop the herb finely - you need a small handful per cuc.
Pickle the cucumber for an hour in a mix of wine/cider vinegar and a teaspoon of sugar - you need the sugar.
Add the herb just before serving.
There are lots of different Nordic versions, a load of ones based on Jewish cuisine and then more of Asian style where the herbs are replaced with miso, ginger etc.

Made a variation of this tonight.
Chopped onions and cucumbers, drizzled with dried parsley, salt, pepper, little sugar and covered in white wine vinegar then left in the fridge an hour or so. Was lovely...thanks for the idea!0 -
