You could core and bake it -stuff the hole with brown sugar/honey/golden syrup and dried fruit plus a knob of butter.

You could peel and chop and stew to a puree, sweeten to taste and eat with cream as pudding, or stir into yogurt or sauce with pork -freezes well

You could make some pastry and wrap the apple (stuffed as for baking) in it a bake -apple dumpling.

You could make some pastry, chop the apple and use to fill a pasty-add sultanas and sugar.

Cinnamon and cloves go well with cooked apple.

My mum used to just do baked apples, I cant remeber exactly how you do them though.

You can use cooking apples with pork very successfully. Ive made a sauce with balsamic vinegar, brown sugar, onions and plles and its lovely!

If you happen to have any sticky-toffee-cheese knocking about, this was better than it looked. ;)
If you lend someone a tenner and never see them again, it was probably worth it.
