can i add fresh strawberries to ...

ok i am making a bday cake for my 5 year old niece this week, she has decided on a fruit cake so i am going to make a light fruit cake and make it in to the castle she has seen in waitrose.

Now my niece loves strawberries can i cut up a handful of fresh strawberries i have and add to the fruit cake mixture?

  • Hi hun if i was you i'd add the fresh strawberries to the topping, or in the middle layer if you are doing one at the last minute.
    They taste delicious. I'm not sure about cooking them but i'm sure someone else will be along soon to help you out.

  • wont be able to add it to the topping as it has to be made in to a princess castle,

    i have added moist dry apricots before which was fine but i have not tried anything else and dont wont to ruin it if they dont work.

    Could you get some dried strawberries? I'm not sure that fresh would work in a fruit cake, I think that they might be a bit too wet, and I don't think you'd be able to tell that they were there anyway ... I've seen dried strawberries in my local supermarkets, Waitrose and Sainsbury's definitely, and I think that they would work better (although tbh they'd just end up looking like the rest of the dried fruit so it might not be worth the expense, as they're not cheap).
  • I know you can dry oranges/lemons in the microwave. Maybe you could dry strawberries in there too before you mixed them into the cake mix. I wouldn't try it with the whole punnet first though!

    I make strawberry muffins with fresh strawberries, and they are fab. They turn out almost like little bits of strawberry jam in the middle of the muffin. I reckon it would work just fine.
  • Think i wont add them to the fruit cake but will make some extra cakes for her maybe muffins then with pink strawberry flavoured icing she will love that.
