Healthy recipes for fussy eaters?

Been trying to come up with new meals to cook as we feel like we're eating the same things all the time, but my partner is quite fussy in what he eats. I preferably want meals on the healthier side and wondered if anyone has any recipes they want to share?
He doesn't like: Mushrooms, Tomato sauces (or anything that taste tomatoey), Seafood (only eats cod and scampi), Pesto.
So far the meals we have are: Spaghetti Bolognese, Stir Fry, Jambalaya, Chicken breast burgers, Chicken stuffed w/ Bacon & Cheese, Fajitas, Carbonara, Jacket Pots, Omelettes, Cottage pie with butternut squash, Chicken bake, Chilli con carne, Curry, Scampi or Fish & chips, Chicken Cesar pittas, Burritos
Any ideas would be great!

I think most cook books out there seem to be for healthy eaters! Where recipes come in if you want to stick to website only, try googling for recipes and hundreds will come up. Good Housekeeping and other well known branded names tend to be top of the list, you put in the meat/fruit or whatever you are trying to base your meal around and select the low fat/salt/sugar...etc version and you get about a hundred to sift through.
I would try to narrow down what you want to cook (eg what is in your fridge, what is on offer at the supermarket or what you feel like eating or trying to avoid; so for example low carb, low sugar, low fat or tomato or gluten free and so on) first to narrow things down. Then you will be able to find entire websites based around the food in question!0 -
I wouldn't tie myself in knots catering for a fussy partner, assuming that he has no disabilities that make him physically incapable of preparing food.
But the Hairy Dieters books are full of healthy recipes and I'm sure that some of the recipes from these books can be found on the web (or the book in the library) or the books can be bought from Amazon or supermarkets quite cheaply.0 -
Do you not put any tomatoes in your Bolognese, jambalaya or chilli then?
Do you have roast dinners or casseroles?
I don't know if you add veg/salad to some of the things you've mentioned, otherwise it looks a bit devoid of fresh veg.Over futile odds

Burritos and fajitas are not healthy:eek:- Is it just the two of you?
- Will he eat salad or veg?
- Do you have a garden where you can grow your own fruit and veg?
- Do you have an Aldi or Lidl in your town?
- Do you use your local market, greengrocer and butcher ?
- Are you working?
- Will he eat vegetarian?

Most of our meals we have with veg.
I do put tomatoes in dishes, but not too much. It's fine as long as it doesn't taste too "tomatoey".

A lot of the meals I don't feel are 'healthy' enough, which is why I was asking.
It is just the two of us, we do have a little one but he's only just started on fruit and veg purees.
We do have salads, but again I would like to be able to make a variety of them! And he will eat veg, we make sure to add it in to our meals in one way or another.
We have started shopping in Aldi, as weekly, its taken our shopping total right down. I just really want to get some new meals and recipes under my belt! We both work usually, but I'm currently on maternity leave. The income has obviously reduced because of that, but certainly switching to Aldi has helped a lot.
Vegetarian is an option as long as it's full of flavour, he is quite a fan of meat in all it's forms.0 -

And I'm hoping not too! So far though, he seems to eat anything I give to him so I'm hoping he'll take after me0 -
One idea is to try breading your own fish in panko (dip in egg first) and baking it rather than buying battered. Another might be to try some of the things he likes with healthier insides--i.e. burritos can be very healthy if you stuff with salad, avocado, beans (tinned kidney or black beans--season yourself), a bit of lean meat, and brown rice if you need the extra carbs. Aldi now do brown wraps which are slightly higher in fibre than the white. Similar with fajitas--make your own seasoning to keep salt levels down, use lean meat in small quantities and bulk out with sliced peppers and onions. Top with fresh salad--shredded cabbage raw is great in both, a squeeze of lime over the top etc. My OH will eat just about anything if it is in a wrap--he learned to like salmon this way as I seasoned it, topped with shredded spinach, chillis and lime.
Since he already likes chilli, look into some of the veggie chilli recipes0
