Chocolate biscuit cake experiences

Hi,


Looking to start on the OH birthday cake next week. Planning a two tier cake, with a 9" chocolate biscuit cake on the bottom and a small madeira/sponge on the top. I plan to ice them with fondant and decorate. I will also be making ganache topped cupcakes to sit around the edge of the bottom tier.


My question is - has anybody found a chocolate biscuit cake recipe that hold together well? I've made one once before and although it tasted great it crumbled when cut and became a mess. This will be feeding family and friends so want to do well and impress!


I'm making it on Friday and we will be eating it on the Sunday. Hoping to store at room temperature to prevent condensation but also afraid it might soften the cake too much!


Maybe I should just stick to a shop bought cake :D

    when you say chocolate biscuit cake do you mean the no bake kind made with crushed biscuits?
