Hi All, Right i have a challenge for you. I have the following things in my house at present and about £5 in my wallet. The thign is id like to try and get a few weeks worth of meals out of these few things because we have unexpected bills this month so the longer i can go without doing a food shop the better plus i want to run resources down to get a more practical food cabinet togehter not junky stuff. There is me and my 3 year old all day (so brekkie, lunch and dinner) and bf is here for dinner but he also likes to take food to work (they have a microwave and a fridge) adn he doesnt really eat breakfast but hes quite a snacky person too so id like to know if any of you can come up with ideas with these ingredients.(also i apologise becasue my paragraphs arent working for some reason so if anyone could make these into a proper list id appreciate it!) Ok so in my fridge i have bacon, eggs, carrots, new potatoes, mushrooms, mince, onions, apples, grapes, half a swede and some baking potatoes. plus a 2 pt of full fat milk and a 4pt of semi skimmed milk.In the freezer i have a bag of mini sausage rolls, 6 chicken breasts which have been in there about 3 months so not sure whether to eat or not, 1 garlic baguette, bag of sausages, another 800g pack of mince, bag of green beans, some corn on the cob pieces and a small forzen chicken thats been in there since christmas!Cupboard wise i have Porridge Oats, Flour (both plain and self raising) bicarb of soda, raisins, dried apricots, jelly granule things, bar of cooking chocolate, sprinkles, weetabix, rice crispies, frosties, porridge (ready brek) pasta shells, spaghetti, rice, tin of rice pudding, dried custard tin, lemon curd, jam, chicken oxo cubes, 1 fruit cocktail in juice, bisto granuales, 1 tin kids shapes spaghetti, 5 value curry sauces, 3 value chicken curries, 5 tins of spaghetti, 4 tins of hotdogs, 2 tins of sweetcorn, bottle of ketchup, and a bag of very sprouted potatoes!the only thing i can think of is shepherds pie for tea tonight and then i could freeze a few portions thats left over if i bulk it out with sweetcorn, carrots, some of the green beans, and use up the potatoes! Im also thinking a basic vegetable soup using onion, swede, carrots and the new potatoes maybe with a few chicken oxo cubes.any more ideas appreciated. forgot to add i do have bread too - a few slices of a pre sliced loaf and an unsliced loaf that i took out of the freezer on monday
Time to find me again

for reheatable lunches, omelette works well.
Toad in the hole for tea, sausage pie (potato topping), chicken curry and rice, hotdog pasta, if you get some tinned toms you can have casserole (though might work without by adding stock, fresh veg and tom ketchup). Battered chicken pices with veggy rice
Snacks - dried fruit mix, rice crispie cakes (you can add chopped dried fruit to this too and tastes lovely).
Im sure there are plenty more options!0 -

If you bought some basic tinned tomatoes you could make bolognese sauce and chilli with the mince. By adding lots of veg to them you can also stretch them that bit further.
The same goes with chicken curry. By adding fresh or frozen veg to it you can up your veg intake and make the dish go further at the same time.
For the bacon and mushrooms - chop one onion, fry gently in some olive oil with some garlic, add the bacon then the mushrooms and a tin of condensed mushroom soup. A cheap pasta sauce! You can water the soup down to thin the sauce to get more of it.
Make up your own rice recipes - I cook some rice in a vegetable or chicken stock. Meanwhile fry some onion and garlic then add some veg, scraps of chicken, maybe some herbs, and mix in with the rice. You can make as much or as little as you like and it can be eaten hot or cold for lunch or dinner. You could try doing the same thing but instead of chicken, add some chopped up hot dogs or sausages. You don't even need to add too much meat to this meal.
Sausages could be used in a casserole or just grilled with some mash.
Would DS eat the sausage rolls with the tinned spaghetti for a couple of meals?
If you had some cheese you could make a basic cheese sauce that could be used for macaroni cheese (or macaroni whatever-pasta-you-have). You could also grate some over a jacket potato, make welsh rarebit, cheese omelette, cheesy mash.
I realise that for some of the above need you to buy more stuff but if you bought the cheapest available you could get quite a few meals from them.
