Quick and healthy

Hi MSE'ers!!
I'm needing to get back on track a bit, after a few months of my old ways (you know, spending willy nilly on stuff I don't need).
I recently went to Asda to do the shopping and saved a lot of money by comaring like for like. Asda's own against brand names, blah blah blah. I felt extremely happy with myself, usually I would have spent in the region of £70, but it all came to about £43. :j
A few evenings after my shop, I realised that even tho I had saved money, our evening meals weren't that healthy. Not every night, but usually on the produsts that saved us money. My wife, like most, has a very busy day looking after 2 boys and a dog and would find it difficult to prepare a big meal everyday.
Does anyone have any ideas/recipe's for quick, easy healthy meals? For example we had baked potatoes with tuna the other night, and the boys loved it ,along with the old wallet!!

I find most tomato based pasta sauces are relatively cheap and healthy. I love just roasted peppers, courgette and onion, pasta and cheese. Bacon added is also nice.
Casserole is cheap and healthy and you can tailor to what you have available.
Risotto is also good for leftovers and I find you need minimal meat in the recipe.
How about other kinds of filled jackets? Chilli, spag bol, ratatoiulle, tuna and mayo, bacon onion and cheese (a student favorite of mine), prawns (often on bogof), curry the list goes on and on....0
