Remortgaging - do I need a solicitor?

My fixed rate mortgage ends in a few months, so I have been keeping my eyes open for mortgage deals (with a bit of concern after the recent hike in interest rates - eeek!). I know you have to pay arrangement fees, valuation fees etc, but a couple of places I have looked at said they would pay your solicitor's fees.
Do you need a solicitor to remortgage? And what do they do?
