I like it just griddled; usually serve with salad. Not very inspiring but definitely tasty!

Halloumi is about the only cheese you can easily BBQ without it falling into the coals (hats off to those who find differently!) so I save it until we have a BBQ then kebab with veges.

We usually use it for halloumi aubergine burgers--splash a bit of balsamic on sliced aubergine and griddle along with the sliced halloumi. Serve on a bun spread with pesto. I know you're not a big bread eater, so we also sometimes do a salad. Dice watermelon, fresh green beans, squeeze of lemon all tossed with hot griddled halloumi.

I had halloumi as a starter in a Greek restaurant years ago, it was grilled on top of a thick bacon steak and was really tasty.

Its nice in a burger roll with roasted red pepper and a big mushroom.
Nigella does a sweet potato dish where she bakes it in the oven.http://www.foodnetwork.com/recipes/nigella-lawson/double-potato-and-halloumi-bake-recipe.html
I had some for tea tonight, done in the griddle pan and served with couscous and roasted veg.

I use it on kebabs with peppers and mushrooms, you could add steak for meat eaters
I also just fry it in a griddle pan and serve with a salad
Blessed are the cracked for they are the ones that let in the light
