Probation and remortgage

My boyfriend and I would like to remortgage this year, as there are so many great deals around. Our current fixed period ends in late August.
Both of us changed jobs in 2015, so I am wondering if this is likely to be a problem. I will be out of my probation period by then (I already am in fact), but he won't be until early 2016.
Would you expect most providers to consider it an issue if one partner is in probation when the other is still working it through? I am on a salary of £40K and he is earning £85K and we want to borrow £175K in total. My concern is that as the lower earner, it won't matter that I am through my probation.
Or, is it possible to borrow £175K on £40K these days if it came to it? (I honestly don't know as we bought at the height of mortgage multiple clampdown)
