Need help with quick meal ideas please

I have a virus and have been in bed most of the weekend so far. This week I have loads of end of term activities I can't miss. So busy week plus feeling unwell means I won't be able to do my usual cooking from scratch and Monday grocery shopping at lidl. I am going to order a delivery from Tesco but I am completely confused about what to order, when I have a busy week coming up I usually batch cook for the freezer but I am totally unprepared for the coming week and have no time or energy to cook. I am hoping you could give me some ideas for my weeks menu that will feed 2 adults and 3 children. Healthy options that are quick to prepare. Any help greatly appreciated xxx

    Sympathies. Our family of 4 has also been hit by gastroenteritis this weekend, we spent most of yesterday sleeping and we both work full-time so know how you feel.

    Do you have a slow cooker? Something like a gammon joint that you can just plonk in and leave. Serve with oven chips and salad or frozen veg.

    I'd also go with plonk in the oven and leave to cook items for this week.

    I had the bug last week.
    We'll be having macaroni cheese type dish with leeks, I had spaghetti carbonara last night while OH on his stag do- it only takes as long as the pasta takes to cook
  • bag of frozen casserole veg, frozen diced beef, stock (and beer?). Chuck it all in slow cooker or big pot and make beef stew. You could add aunt bessies dumplings or have it with it or bread n butter.

    If I am home late from work and have no energy to cook I just have cereal for dinner. You can add fruit (fresh or tinned) to pad it out and make it more like a meal.

    I do a full English in the oven. Hash browns, sausage, mushrooms on a tray with halved tomatoes. A dish with baked beans and for the last ten mins I throw in some bacon, usually on top of the sausages. I scramble some eggs in the microwave.
    Chilli con carne can go in oven and can be cooked with jacket pots and rice can also be done in oven.
    Biriani ( vege) and a chicken curry another oven meal.
    Baked fish and wedges.
    Pork chops done in parcels. Lay a sheet of foil per person. Brush a little oil or butter on it add sliced potato, onion, season put a pork chop on top and then top with apple slices. Seal into a parcel and bake for an hour. Serve with baked cabbage.
    I know it's expensive to use the oven but sometimes if I have been at work all day its easy to prep the meal, put it in the oven and either get some other bits done or just sit and chill.

    my tip for quicker jacket potatoes is to stick a metal skewer through them- halves the cooking time :)
    mac n cheese
    bacon,eggs and potato cakes or waffles.
    frozen pizza/salad.
    pasta and pesto.
    pasta with ham and cream stirred through.
    ready made quiche/pies.
    chops and veg and mash.

    You can't beat a bit of good old comfort food. Get some pies down you! Big, chunky, pies + oven chips and beans or peas :)
