I quite often freeze cakes and muffins as they are great for lunch boxes, picnics etc. However, i'm planning ahead to my daughters party and want to freeze some cakes.

I want them to look good as i've got some parents coming, but i can't seem to freeze them without the cake cases looking battered when i take them out (obviously this isn't normally a problem)...anyone got any tips on how to freeze without battered cake cases?

Are you packing them in bags  I pack mine on their sides in plastic boxes. That way they don't get bashed about.

    Enjoy the party

when i freeze fairy cakes i lay them on their sides in one of those large marg tubs, then lift them out of the tub before they defrost. this might work for you

Good idea i'll try...what i've been doing is freezing on a tray first then putting into bags....i'll try on their sides in a tupperware container....Thanks
  • You could try peeling the paper cases off whilst the cakes are still frozen. They come off frozen muffins pretty easily.

Hope someone can help - I'm making muffins tonight - one batch with fresh raspberries and one batch with blueberries - for DD's lunchbox. Anyway, obviously with fresh fruit in they won't keep for long, so can I freeze them. My guess is that I can but I'm hoping someone can tell me for definite.

    Thanks :D

    Hiya
I've always frozen mine and we're all still alive. They look and taste just as good when they defrost. Enjoy your muffins xx

Miuffins go stale very quicklyy, so if you're not going to eat them within 24 hours, they're best frozen ;)

We have an older thread on this subject, so I'll add your question.

The blueberry ones are done now too so you can have one of both!!!

Another question anyway - I'm being really thick now - do I freeze them in their paper cases or not?:o
