Freezing muffins

Hi
I treated myself to a muffin tin and some muffin cases this morning.
My question is can you freeze muffins and then just defrost as needed in the microwave? Or will I need to get them out and defrost well in advance?
I've seen some lovely recipes and I'm itching to try them.

Hi cuddlymarm,
They freeze really well.....I make them, keep them in the freezer and lift out in the morning for packed lunches. It normally takes about an hour for them to defrost fully.

I usually make 24 choc chip muffins at a time for my son's lunchbox, so theoretically they should last about a month. However my children like to eat them straight from the freezer
so they go very quickly and I usually make them every weekend. However if allowed to thaw they only take about half an hour (I don't make the huge muffins).

Muffins freeze really well.

Or if you like to eat your muffins warm (as if oven fresh) blast them for 1 min on full power0

I have offered to make muffins for a local fun day but am actually going away on the morning of the day. I was planning on making the muffins the night before and dropping them off in the morning but it would be much easier for me if I could make them a few days before. I know that muffins can be frozen but have never done it before.
The muffins would be carrot and pineapple, goats cheese and red onion, spring onion and gruyere - do these sound okay for freezing?
Also, can I freeze them in food bags or plastic tubs and then what do I do about defrosting them? Should I take them out the evening before I need them - do I need to warm them through in the oven or just leave them to defrost? They are not supposed to be warm.
Thanks in advance for any help - the muffins always come out great and I really don't want to ruin them by doing the freezing bit wrong!

Hi Bunglegirl,
I have never had any problems freezing muffins. I freeze them in tubs rather than plastic bags so that they don't stick together and just lift them out in the morning as they only take about an hour to defrost.
There's no need to warm them through unless you wanted to eat them warm.

The muffins seem to go down well whenever I make them so I tend to stick to them.
The carrot and pineapple ones are courtesy of Mr Ramsey and the recipe is here:-

The only change I make is to use only half the amount of light muscavado sugar as it states in the recipe.
The savoury ones are from dear Delia - I actually hate cheese so don't eat them myself but they go down very well - especially with men it seems.

I quite often freeze cakes and muffins as they are great for lunch boxes, picnics etc. However, i'm planning ahead to my daughters party and want to freeze some cakes.
I want them to look good as i've got some parents coming, but i can't seem to freeze them without the cake cases looking battered when i take them out (obviously this isn't normally a problem)...anyone got any tips on how to freeze without battered cake cases?0
