The article seems to miss the most obvious way of avoiding big bills which is simply not to attach debit/credit card to your app store account. Top up cards are easy to find in stores and online, I use them for the Xbox, Sony Network and Play Store even though there's no-one else accessing them as it protects my credit cards from fraud.

Hi Johnmcl7 - I've updated the article with further information as Apple has now got back to me to confirm the steps needed to turn off in-app purchases and to remove the method of payment from the account.

    Many thanks, MSE Paloma
