Remortgage but have handed in notice

Hi,
Can you please help? My mortgage has just come out of its fixed term and I'm wanting to lock in a fixed deal for 5 years. I have handed in my notice though to go self employed but this won't happen until September and I get paid until the end of August. Is this something I need to declare? And if I do I assume I won't get a good deal?

I think if you don't it might be classed as fraud I am sure other people with more up to date info will tell you as it's been a while since I applied for a mortgage but I am sure they said we had to declare any changes in circumstances.0

As I understand it check what retention deals are on offer from your existing lender. These don't re check your affordability / criteria.
I believe that if you go to another mortgage lender they will want you to apply for a new product as part of which you will have to meet their lending criteria (which will likely include not to be in a probation period or that you have to have been employed in the same company for at least six months) and to lie in that application would be mortgage fraud.
Criteria from lender to lender will differ, but I don't know if any aren't picky about employment (I'd be surprised if this was the case)!0
