what to do, with leftover cabbage / carrots?

Did a bit too much veg last night, and hate to waste the rest.. ideas?

If its not cooked: add onions and mayo for coleslaw

A second for bubble and squeak - mash the carrots, mix with the cabbage and smush together. Fry in a pan and a bit of oil/butter in little patties or as one layer.
You could have it with poached eggs and bacon, gammon, or any other meat.
If the cabbage is in whole leaves you could make cabbage parcels - cook rice, add cooked, diced bacon and onion to rice (you could dice the carrots and add these). Put a spoonful in the cabbage leaf and fold in the sides then roll it up. Squash them into an ovenproof dish and baked til piping hot (30 mins-ish). Serve with mushroom sauce (condensed mushroom soup, partly diluted). My Ukrainian Nana used to make these, and my Mum still does them occasionally. I have cooked leftover cabbage (both the white and green savoy) in a little oil with garlic and served up as a side for another meal - nobody complained there was cabbage again! I see no reason why the carrots couldn't be included. just don't cook it too long - only long enough to heat through or it will overcook.0
