My hubby is not great at eating veg so I used to grate carrots and courgettes into lots of dishes. I then bought a little food chopper that blitzes veg into tiny pieces so this works really well.
I agree that a slow cooker is great for making tasty dishes. I know money is tight but it could be money well spent when things are a bit easier, they also use very little electricity. Mine cost £15.
When you make casseroles, curries and the like make sure you chop the meat up into very small pieces so it looks like there is more. This really does work.
My OH is a real lover of meat dishes and I struggle to get him to eat more healthily. I just have to make small changes and try and adapt dishes that I know he likes.0
