Quick cook polenta serve with?

hi all


I have a pack of quick cook polenta optimistically purchased in Lidlee that is going out of date next month. I want to be thrifty and use it but what can I serve it with? There is no info on the packet.

Can any of you lovely people help?

    Do you mean the free flowing quick cook stuff as opposed to the block of ready made polenta?


    Some suggestions:


    -use as the Carb part to mop up creamy meat dishes like pork chops /chicken in mustard / garlic mushroom sauce
    - as above with rich tomato sauces, like meatballs or ragu
    - make up and add hideous amounts of butter and parmesan, and serve with slow roasted garlic tomatoes
    -make up, leave to set, then cut into fingers, roll in breadcrumbs and parmesan to make crispy polenta fingers

    The quick-cook (vesuvius / quatermass type) can be made into the block type - line a roasting tin with foil, grease it all over with a little oil, make up your polenta seasoning it well, pour into the tine and leave to cool & set. When cool, cut into thick "chips" and either griddle or oven bake, then make into Jenga towers by stacking them.

    You can use it as carb for all sorts of dishes - its lovely with a tomato-based dish, or roasted vegetables. We often have it with h/m burgers or with mozzarella-stuffed chicken thighs.

    Dollop it on a plate alongside items such as sausages, fish fingers, meat portions (e.g. chops), or stew .... just treat it the same as another hot side dish, e.g. like you would mashed potato. You can even make "potato-based-cakes" out of them, the same way you would with cold mashed potato.

    OR use it to top any meat/stew to turn it into a shepherd's style pie - any meat you'd top with a mashed potato topping can be done with polenta.

    OR .... use it to make a cake if you're the sort of house where cakes are eaten regularly.

    OR mix it with breadcrumbs to coat something you're cooking, anything from a chicken kiev to some fish cakes or potato croquettes.

    OR, make a scone-style topping for meat/veg stews and bake in the oven for 20 minutes

    Any dish where mash potato would be appropriate is also appropriate for polenta.

    Although I would stick to Med dishes. I don't fancy Sausages, polenta and onion gravy haha.
