Late holiday booking advice needed

Hi all
Not been away for 4 years i am going away with my partner and she has never been abroad!
The only definites are
We need to fly sat 4th July and return sat 11th july (suppose could fly the sunday if it was available) And fly from Gatwick (we are south east based)
Somewhere without young kids (no offence but its a sensitive subject for my partner for reasons i wont go into at the moment), warm and relaxing...
Budget is max £800 half board or maybe even b and b prefered, not much point all inclusive as i dont drink and my partner is not a big drinker.
I suppose my questions are.... Is it at this late stage going to get cheaper if i wait until the week or even days before considering we are flexible with destinations?
I have been monitoring the major sites the last few months and not a massive amount of change so far in price. Should i go to an Agent with these outlines and see what they can do?
Basically i am a bit naive with this these days so any and all advice will be appreciated and acted upon.

Failing that, just keep searching - Holiday Pirates finds some good deals - and book when you see something you like and forget about holding out for a better deal.Change is inevitable, except from a vending machine.0 -

You may not be flexible enough for a great bargain.

If taking the flight Monday morning and cutting a day or so out of our week means a significantly better deal then that would certainly be an option0 -

Put your dates into Travelsupermarket and leave it on I'll go anywhere. It will chuck some options including on travel republic which mainly find cheap hotels and accommodation seperate:T:T :beer: :beer::beer::beer: to the lil one
