Am planning to make a vegetable puff this evening; puff pastry covered in chopped tomatoes, red pepper, spinach and goats cheese ... can't wait; only question is do I wilt the spinach first? Many thanks!

I would. I often make spinach dishes as it has cropped well on the allotment. I always wilt first. If I don't get round to making the dish it pops in the freezer and comes out really well.0

Is this like an open tart? I assume that you're planning to use the other veg raw. I'd just wash the spinach well and add that raw, too.

If it were me making a covered pastry, I would wilt the spinach and the toms to get some of the water out as i failed to do this once and baked a soggy mess!
If it's an open tart, I think the veg will steam adequately in the oven. 0 -

I agree the wilting would be m,ainly to get rid of some excess water and avoid a damp tart!!!

Result! A really lovely meal which DS2 (2) absolutely loved.
Rolled out puff pastry long and thin; diced red onion, red pepper and organic chopped tomatoes, fried with a little lazy garlic and some herbs. Spread this on the puff pastry, topped with wilted spinach and some sliced courgette which I had put in the colander when wilting the spinach ... crumbled over some goats cheese and baked for about 20 minutes ... would definitely make this again and would probably add a little bit of bacon next time. I would next time try just chopping up the spinach and not wilting it, as parts of it burnt, but that might be because I cooked it on combination oven and grill.
Really chuffed as we had picked all the veggies (apart from the red peppers) at PYO last week too. Very yummy meal.That's Numberwang!0
