Currently on a fixed mortgage on a 25 year term which is nearly ending so Would it be better to get onto a tracker or pay a couple of grand and then get back onto a fix again say 2 years and repeat?

See what the lenders customer retention rates are and do some sums with the figures, look for fee free products as well.

Not much information really to go on!
Do you like remortgaging every 2 years?
Without LTV, term left, Interest rate now and what the mortgage reverts to at the end of the fix IT IS ALL GUESSWORK
